Today we celebrate Memorial Day for all the veterans who have served or, are serving our country to keep us safe and going about our normal business. THANK YOU!!!!!
But..... it is also a time to gather with family, friends, and neighbors to celebrate the beginning of 'summer'.... not the official end of spring.... but an emotional end of spring and the emotional start of summer. School is almost out and/or is already out for summer break.... graduations are being attended and celebrated..... tis the beginning of the 'wedding season'.... grills are uncovered and cleaned up.... pools are opened..... you can just feel the world sighing and singing.
Joe played in a golf tournament this morning/afternoon..... and is beaming a smile from ear to ear with winning First Place...... he had a great day of golfing personally, met new friends, and then came home to retell his day hole by hole. He rarely has time to relax these days.... so it was great to see him have such a good time.
Joe was the grill meister and I was the cook..... our menu was..... Fresh River Salmon (grilled)... BBQ Babyback Ribs (grilled).... Grilled Asparagus.... Angel Hair Pasta with Lemon, Olive Oil, and Fresh Parmsean Cheese (shaved)... Corn on the Cob.... Muscles.... and Citrus/Fennel Salad.... served with french bread toastettes and flatbread. DELISH After dinner I whipped up some fresh cream.... added a splash of vanilla and approx. 1/3 cup sugar..... then whipped til stiff peaks formed. Served the Whipped Cream over Angel Food Cake and Fresh Sliced Strawberries.
This is the first year in many that Joe and I have not hosted a Memorial Day Family Cookout gathering.... but with us being gone all weekend, all our children were all working, that we just decided to have a quiet day to recoup from the weekend. It turned out well... Joe really enjoyed the rare opportunity to play golf and hang with pals..... I chilled poolside with Kevin (Lauren's Finance).... I cooked a very tasty dinner.... that the girls ended up joining us for dinner after they got home from work. Now it's 9:45 and Joe and I are already in bed... he full out roar snoring.... me 2 minutes away from gentle snoring! LOL : )
